Chicken Parm Panini’s

This was a quick dinner that Aaron and I came up with! I was thinking chicken parm but we were thinking about different things we could do with it besides the normal chicken parm over pasta, so this is what we came up with!

Ingredients:

1 loaf of ciabatta bread

2 chicken breast, sliced (long way) to get pretty decent sized sandwich chicken pieces (I think A got about 3 slices out of each breast)

shredded mozz cheese

pasta sauce

2 eggs

breadcrumbs

flour

Directions:

  • After the chicken is sliced and you have your pieces, you want to make the chicken parm piece! Dip the pieces in flour, then egg then bread crumbs.
  • Next you want to cook the chicken in a fry pan, getting it nice and crispy and fully cooked
  • When your pieces are ready, cut your bread (A cuts it on a diagonal, but cut it however you like šŸ™‚ )
  • Then make your sandwich, bread, chicken, some sauce, some cheese then the bread (A tried his first one with tomato and maybe something else but he eventually fell to my ways and made a classic chicken parm šŸ™‚ )
  • Finally, put it on the Panini maker and cook to your perfection!

Avalanche Bars

I made these about a month ago for my Aunt’s 50th Birthday Party and man were they simple and so delicious! I enjoyed them but my husband LOVED THEM!!!!

These were absolutely simple, no bake bars! Looking for something quick that would satisfy a sweet tooth and be a hit at a party, well here is your recipe! I mean peanut butter, chocolate chips and marshmallows in one bar…YUM!!!

Avalanche Bars

Ingredients:

  • 12 oz bag of White Chocolate Chips
  • 1/4 cup creamy peanut butter or more depending on how peanut buttery you want the bars
  • 3 cups Rice Krispies
  • 1 1/2 cups mini marshmallows
  • 1/4 cup mini chocolate chips
  • Lightly grease a 9×13 pan

Directions:

  1. In a microwave-safe bowl melt the white chocolate chips until completely melted and smooth
  2. Add the peanut butter to the melted white chocolate and mix until completely blended
  3. Stir in the Rice Krispies and stir until welly coated
  4. Let cool approx 15 ā€“ 20 minutes (just long enough so it won’t melt the marshmallows and chocolate chips)
  5. Add the marshmallows and the mini chocolate chips and stir to combine.
  6. Pour mixture into the prepared pan and spread evenly, pressing lightly with the back of your spoon, but do not compact too much, otherwise they will get hard.
  7. When the bars are completely cooled cut into squares and enjoy!

Italian Bread Pizza

So lately I have veered away from the baking…not because I am bored with it, it is still one of my FAVORITE THINGS!!! BUT with these twins (6 months already! can you believe it!!! We are so excited!!!), baking has kind of taken a back seat. I have not come up with anything new, but I have been finding and experimenting a lot with Pinterest recipes!

These recipes are unfortunately more like savory dinners then sweet and scrumptious baked goods! I guess with our family getting bigger soon, I should prob get to making dinners more…which I am actually enjoying quite a bit! I mean even though pregnant we need to eat right?!?!

My husband has been amazing and took care of me, cooking us dinner EVERY NIGHT in the beginning when I couldn’t stand the sight of raw meat and I was always exhausted! I appreciated this more than words could say! You are an amazing man and I love you very much!!!! ā¤ So I figured now that my energy is back I should step it up a notch šŸ™‚

Well this recipe I of course found on Pinterest (because it ROCKS!!) and could not be any simpler! It is quick and easy and tastes so good!!

The recipe was found here (French bread pizza), and here is my adapted version:

Italian Bread Pizza (enough for 2)

1 loaf of Italian Bread
Pasta Sauce (we use whatever we have on hand)
Any toppings your family likes: Pepperoni, Canadian Bacon, green peppers, onion, pineapple, mushrooms, olives,Ā  tomatoes, etc (normally we just again, use what we have on hand, this time it was Onion, Green Pepper and Bacon…YUM!)
2 CĀ  Mozzarella Cheese shredded (we like cheese and we usually use most of this if not all)

Pre-heat oven to 500 degrees. Cut the french bread in half length wise, put the halves on a cookie sheet open faced, spread sauce on each side.Ā  Put on your favorite toppings, and top each half with cheese. Bake for 5-7 minutes till the cheese is melted and slightly browned.Ā  Cut into 2 inch wide strips and serve.

**of course I don’t have any pictures…I really stink at this, I make something we DEVOUR it and then I go crap I should have taken a picture for my blog…UGH!! One time I will get it!

We Love this recipe, this is usually something we can prepare and eat within a 1/2 hour on those very busy days! The recipe called for french bread but the couple times we have made it we used Italian bread and when it comes out, the outside is nice and crispy and the inside is soft, it is so delicious!

Baby Fairy Update

Well it is going on 5 weeks now and we have no idea still who the wonderful Baby Fairy is!! Since the last time I posted about the Baby Fairy we have received 3 more wonderful little surprises!

This adorable little Giraffe sings and slowly moves it’s head…LOVE!!!

Look at the super cute hooded duckie towels!!! Our little peanuts will be so warm, cozy and cute in these!!!

So the Baby Fairy is getting a lot of guts to show up at our house on the weekend which makes me believe that this little stinker knew we were going to be away…hmmmmmmmmmm only a few people actually knew that lol. Baby Fairy who are you šŸ˜‰

HAHAHA anyway Baby Fairy we Love you!!! Thank you for all you have done and given us! It is truly amazing to have someone (whomever you are) so special in our lives! I have a feeling you are going to be an awesome love in our children’s lives…I mean you already are!
