February Book Club

This month as with recent past months we have been reading very short easy books. This is mainly due to, with the twins, my reading time has been cut tremendously, but also because another member (one of my dear friends) also had a baby last month. Precious little Mackenzie was born on 1/23, so needless to say her reading time has been cut too!

This month we read a free Kindle book called Double Dare by Rhonda Nelson.

You are always hit or miss with free books, they normally aren’t anything fantastic but some are cute and some stink! This one wasn’t too bad! It was a cheesy love story that was pretty decent for the length of the book (106 pages). My biggest complaint was that there were tons of errors (grammatical, spelling and word placement).

Goodreads rating: 3.3 stars

Our rating: probably 2.5/3 stars (one of us didn’t read the book πŸ˜‰ ) But she had a newborn so we forgive her!

Well, you be the judge and read it if you are curious..it was cute and FREE!! So what the heck, if you are looking for something cheesy and quick and don’t mind being annoyed by errors then give it a shot.

Oreo Chunk Chocolate Chip Cookies

This is one of the first recipes I found and made on Pinterest and I make them for different functions here and there and they are always such a HUGE hit!


I am a HUGE cookie monster which I am sure I have mentioned before, but these truly are so good!! Then again, anything with Oreo’s in it is going to get an A++ from me πŸ™‚

Oreo Chunk Chocolate Chip Cookies

Recipe makes between 4 and 5 dozen cookies.


2 1/2 cups all purpose flour
1 teaspoon baking soda
1 teaspoon salt

1 package vanilla instant Jell-O Pudding (not prepared)

1 dash of cinnamon

1 cup (2 sticks) butter, softened

3/4 cup sugar

3/4 cup brown sugar

1 teaspoon vanilla extract

2 eggs

2 cups chocolate chips

30-40 double stuffed Oreos, crushed into medium chunks (put in a ziplock bag and use a rolling pin)


Preheat oven to 375 degrees Fahrenheit

  • In a medium bowl combine the flour, baking soda, salt, package of vanilla pudding mix, and dash of cinnamon.
  • In a second larger bowl beat together the butter, sugar, brown sugar and vanilla extract until creamy.
  • Add the eggs one at a time, beating well after each addition.
  • Slowly beat in the flour mixture until smooth.
  • Stir in the chocolate chips and Oreo chunks.
  • Drop by rounded tablespoon onto ungreased cookie sheet.
  • Bake 9 to 11 minutes or until golden brown.
  • Cool on wire rack.

If you are a cookie lover, I promise you this is one cookie you don’t want to skip out on…get to baking! Test them out and let me know what you think πŸ™‚

Menu Monday 2/24-3/1

So I slacked big time on sticking to the menu, we can blame that on laziness, but can I blame that on having two infants?!?! Yep…lets go with that πŸ˜‰

One of the meals that I did make was the Baked Cream Cheese Spaghetti Casserole, and lets just say there is still a bunch in the fridge…we weren’t a HUGE fan! Normally meals we make will get eaten for lunch the next day, but needless to say this one didn’t make it as a lunch hahaha.


Anyway, here is this weeks menu with some repeats:

MONDAY- Chicken Lanzone with Oven Baked Potato Wedges

TUESDAY-Β  Crescent Roll Taco Pizza

WEDNESDAY- Prob some sort of take out

THURSDAY- Honey & Spice Pork Taco’s (one of my favorites!)

FRIDAY – Cheesy Tater Tot Casserole

SATURDAY – Cheddar Chicken Bacon Ranch Pasta (a Major Favorite, which is a Pinterest Recipe we found way back when and one we actually repeat πŸ™‚ and… it is a Weight Watchers Recipe!!!)

SUNDAY – Pork Chops with Creamy Mustard Sauce & Creamy Garlic Noodles

I’m sure there are some on here that won’t make it for dinner but we can start out the week being hopeful πŸ™‚

Apple Cinnamon Scones

Recipe, that I actually found, and made prior to these little kiddos being born. I made these one Sunday morning while pregnant and A & I LOVED them. I hate that I find so many recipes on Pinterest try them and rarely make them again. BUT this one is a keeper and I HOPE to make them again soon (you know when I have FREE time hahaha). And there are just so many more recipes on Pinterest to try when I do have that time so we will have to pick and choose πŸ™‚

Apple Cinnamon SconesΒ 

Apple Cinnamon Scones
2 cups All Purpose Flour
1/4 cup Sugar
2 teaspoons Baking Powder
1 teaspoon Cinnamon
1/4 teaspoon Nutmeg
1/2 teaspoons Baking Soda
1/2 teaspoon Kosher Salt
1 stick {8 tablespoons} Chilled Unsalted Butter
2 Apples peeled and chopped (they called for shredded but I like apple chunks in mine)
1/4 to 1/2 cup Whole Milk, plus more for brushing
1 tablespoon Sugar, for sprinkling
Preheat oven to 425 degrees and line a sheet pan with parchment paper.
In a large bowl combine the first 7 ingredients. Then cube up the chilled butter and add to the flour mixture. With a fork, blend the butter and the flour together until small crumbles form. Add in the apples, stir. Gradually add the whole milk, stirring until the dough forms.
On a lightly floured surface knead the dough 8-10 times before forming into a rectangle. Cut eight wedges and place on prepared pan. Brush with a little milk and sprinkle with sugar.
Bake for 12-15 minutes or until the edges are lightly golden.

So one lazy Sunday morning (maybe this weekend!) give these a shot, I promise you this is a Mommy approved Breakfast! I tested this Pinterest recipe so you are guaranteed a no fail πŸ™‚

Sorry for the delay, I was home sick with my little ones yesterday 😦 Being 3 1/2 months and having a cold is no fun, but it was nice to cuddle with my little man yesterday while Alleigh went to work with dad for a couple of hours. This is a menu I had planned before we decided to make some changes to our (mine) daily dinners (no dairy, at least for a week). But I figured I would post this anyway πŸ™‚

Upcoming changes/additions

So since I am now a Mommy, I don’t have all the time in the world to come up with awesome cookie recipes πŸ˜‰ That being said I will be posting more and more about the wonderful Pinterest recipes I find and make. I hope to, at-least once a week post a new segment called Pinterest tried and Mommy approved!


Another section I would like to add once a week is Reading Recap. I know I already post about my Book Club reading but I also read a bunch of books (not that I have much time now) that I would love to share with you all. There is nothing better than sharing my love for books! πŸ™‚

I also plan to start planning a menu and actually making dinner everyday now that we are in a somewhat routine, so I am thinking about doing a Menu Monday segment. It may keep me on my toes and make me plan out what we will be having for dinner during the week. This may also help with the grocery shopping, so we know exactly what we need.


Well that is all for now, lets see if I can keep up with this. I hope to make this blog a little more active for all you AWESOME followers πŸ™‚


Life Update :-)

Well again like the last time, it has been a LONG time since I have posted.

BUT my twins have arrived! They were born October 29th exactly a month early. Since we were team Green the entire pregnancy we were excited when the twins were born and found out we had a girl and boy πŸ™‚ Alleigh and James were born 1:22 and 1:23 pm respectively.

Being a mom and a mom to two at that has been a challenge! I am so excited to be a mom and seeing my precious 3 month old smiles makes every struggle so worth it, but man having kids is HARD WORK! πŸ™‚ Thankfully, I have a very strong better half who makes each struggle more bearable, and believe it or not makes our relationship that much stronger!

Anyway, since the last time I have posted I have had the twins, went on maternity leave and am now back to work. Going back was definitely bittersweet, I was excited to be back to the grind of things and start our new daily routine but of course I would miss those beautiful babies!

This has pretty much consumed my life since last but soon enough there will be some awesome recipes and such being posted, so stay tuned πŸ™‚
