Menu Monday fail!

REALLY!!! SNOW, HAIL AND FREEZING RAIN TODAY!!!!!!!! Come on it is SPRING for goodness sake!

So this will be week 2 that I have failed on Menu Monday. I really think this crappy cold weather and the lack of sun is getting to me! I really have no ambition for anything lately! A made dinner every day last week and I AM TRULY GRATEFUL! This week I have no idea what we are going to have, I need to go grocery shopping at some point soon though!

Well today will be chicken something lol but that is all I know for this week!

Anyone have any good simple recipe ideas they would like to share??

Ranch Bean Dip

Looking for a quick but very good appetizer? This has your name all over it!

With only 4 ingredients and about 10 min warming you are done!


Ranch Bean Dip


1 can refried beans

1 cup sour cream

1 package of ranch dressing mix

2 cups shredded cheddar cheese


Add all ingredients to a medium sauce pan and heat over medium heat. Stir everything together until it is warm and well blended. Enjoy!

If that isn’t easy enough then I don’t know what is!

Menu Monday 3/17-3/23

So this weekend was another eventful weekend! We went to a Birthday party then continued our search for flooring. We are sooooo close!!! I think we have decided what we want, now we need to schedule a measure πŸ™‚

Last weeks review: Loaded Baked Potato Soup was very good! A made it and may have made it a little spicy but we really liked it! One Pot Cheeseburger Casserole, was also really good and I am eating it for lunch today πŸ™‚

Crescent Roll Taco Pizza

  • 1 tube crescent rolls
  • 1 lb hamburger
  • 1 cup black beans (drained)
  • 1 cup canned diced tomatoes (drained)
  • 2 cups cheese (I used cheddar and mozzarella)
  • taco seasoning

Preheat oven to 350F.

Line a baking sheet with aluminum foil and spray with cooking spray.

Unroll the crescent rolls on the baking sheet. Press together the crescent roll’s seams (very important step! Make sure you seal it well so it won’t break apart, you don’t want your pizza flopping! You can even roll all the dough into a ball then use a rolling pin and roll it out to make sure there are no holes).

Brown hamburger and pre-bake the crust in the oven for 5 mins .

Drain meat, then mix in taco seasoning and make according to package.

Assemble your pizza, spread around the taco meat, black beans & tomatoes then top off with the cheese.

Bake for 15min until the cheese is melted and the crust is light brown

Gobble this up and don’t regret it!! πŸ™‚


Blueberry Muffin Bread Pudding

Have you ever bought something that you thought would be really good and then you dive in and realize it is not as good as you hoped? That is what happened with me with these blueberry muffins! I love blueberry muffins and had high hopes for the ones I bought at Price Chopper and they were a huge let down, but I couldn’t find it in myself to throw them away. So they sat on the counter for maybe 4 days and staled while I thought of something to do with them. Then A suggested bread pudding, I have never had bread pudding before but I figured what the heck lets give it a shot! I found this recipe and gave it a shot and here are the results:

2 cups granulated sugar
5 large eggs
2 cups milk
2 teaspoons pure vanilla extract
2 large blueberry muffins broken up into pieces
1/2 cup packed light brown sugar
1/4 cup (1/2 stick) butter, softened
1 cup chopped pecans
Preheat the oven to 350 degrees F. Grease a 13 by 9 inch pan.Mix together granulated sugar, eggs, and milk in a bowl; add vanilla. Pour over broken up muffins and let sit for 10 minutes.

In another bowl, mix and crumble together brown sugar, butter, and pecans.

Pour bread mixture into prepared pan. Sprinkle brown sugar mixture over the top and bake for 35 to 45 minutes, or until set. Remove from oven.

This was really good but maybe a tad too sweet! If you don’t like it really sweet, I would suggest cutting out about 1/2 cup-1 cup of sugar since the muffins are already sweetened.

Menu Monday 3/10-3/14

Good Afternoon blog followers! πŸ™‚ I hope you all had an amazing weekend! Our weekend was pretty eventful, well on Saturday anyway…Sunday was kind of a lazy day! Saturday we were out “shopping”, we are in the market for new floors, so we were out looking at TONS of samples. We hopped from Lowes to Lumber Liquidators to Home Depot and the kids did AMAZING!!! We came home with a bunch of hardwood samples, now we need to compare prices and um find a carpet?!?!

Anyway, now on to the menu,Β  we did pretty good with sticking to the menu last week and I have a feeling this week won’t be as good!

Last week recap: The good things we made were the Cheesy Tater Tot Casserole, which was a play on Shepherd’s Pie and was really good!!! This is going to be an awesome kid friendly meal when the twins are at that stage! The Apple Baked Pork Chops were pretty awesome too (thanks honey for slicing all those apples!!), and will definitely go in to the rotation since I can never find good pork recipes! Now on to the UGLY!!! Yeah so that Maple Dijon Chicken…GROSS!! You really have to be a Dijon lover to enjoy this because it really takes over…lets just say it was so bad that I skipped dinner that night, and the trash got fed…

Book Review

This past weekend I finished two books, one which I really enjoyed and one which I really did not!

Audio-With Breastfeeding I have a lot of time to listen to books, and it is nice to get back to listening to audiobooks! I used to listen to them a lot at work, but I guess I just got tired of missing things. I have a love hate relationship with audiobooks! A reader can make or break a book for me and I HATE IT!! I always found myself saying I think I would like the book better if I read it…which is another huge reason why I put audiobooks on hold (and prob still would if I didn’t need to fill time hands free πŸ˜‰ )

The audiobook I recently read was Memoirs of a Geisha by Arthur Golden and shockingly I really enjoyed it, I gave it 4 stars!!! The readers weren’t bad even though the main character Chiyo’s (Sayuri’s) character sometimes annoyed me, but I guess it was more the writing then the reading!


Here is my short review (I kinda stink at them!): I actually enjoyed this a lot more than I thought I would, especially on Audio. The story was interesting and I loved the “twist”. At times Chiyo’s (Sayuri’s) voice was a bit annoying and repetitive when talking to men, but I easily got past it. This topic and Japanese culture is something I am very unfamiliar with and it was a nice way to learn about the custom’s and a geisha’s way of life.

Book– I have a Kindle and tend to read it more now that I have two infants because it is easier to turn a page while entertaining them :-), but I love actual books! I love looking at and watching my bookmark move, showing me how much of the book I have left and turning an actual page instead of pushing a button or swiping your finger across the screen. Call me old fashioned but I would prefer the actual book then any e reader! πŸ™‚

The book I recently read and HIGHLY DISLIKED was Extremely Loud and Incredibly Close by Jonathan Safran Foer, I gave it 2 stars (maybe a 2.5). I had high hopes for this book and was very disappointed. Mainly I was bummed with the writing style, it was very hard to follow, I may even have given it a better rating because of the story if it wasn’t for the writing.


Here is my review:Β  I really wasn’t a big fan of this book. I think I expected more, and the writing style, I really DISLIKED. Most of the time I was confused, making it very hard to follow and distinguish who was speaking at times. I am disappointed in the “story lines” I feel as though they were jumbled and in the end I felt were a let down.
