Hello 2019 – Baked Cinnamon Roll Pancakes

So it has been about a year and a half since I have posted here. I continue to keep the site active (not that anyone is still here) because I do have desire and hope to let go of some of the stress and craziness of my life and try and do a couple more things that I enjoy! My life is consumed with being a Mom and Wife and I wouldn’t have it any other way! Is life crazy, hectic and all around a train wreck sometimes…ABSOLUTELY! Honestly in the moment I don’t know how I am going to get through it, it is tough but you have to be the best you can…you are raising three amazing little ones!

Do I yell, do I get wrapped up in the little things and not be in the moment as much as I can, YES! Well this is me starting a new year with a change! I can’t promise that I will be the BEST Mom but I will try my hardest to be the Best in their eyes. Will I be the best Wife, prob not, but will strive to be! I know the love and bond A & I share is the wonderful foundation for our beautiful family! But I know I have made changes for the better and that I am going to try like heck to shift my focus, living more in the moment and slowing down! My life is my family and that is where I need to keep that focus.

Anyway, the point of my spewing is that this is hopefully a shift where I can continue to do the fun things with my family, get back to crafting and baking and enjoy it with them, in return posting here for you all to see!

Without further ado, on this very cold MLK Day. I am working from home and we made breakfast together. Something I have not done in a long time.

We did not do the topping but the kids loved it with just syrup or plain 🙂



1 1/2 cups milk
4 T. melted butter
2 large eggs
2 T. sugar
2 cups flour
4 t. baking powder
1/2 t. salt



Cinnamon Roll filling:

4 T. melted butter
3/4 cup brown sugar
2 T. cinnamon


Preheat oven to 350 degrees

Grease a 11×17 pan (or whatever you have, I used a cookie sheet)

In a large bowl mix the butter, milk & eggs


Once well combined add the sugar and mix well

Slowly start mixing in the flour, I did 1/2 cup at a time

Then add the powder and salt

Pour the batter into your cookie sheet and make the cinnamon roll filling

Mix all the cinnamon roll filling together and put it in a small ziplock bag and cut a hole in one of the bottom corners.

Take the bag, squeeze and start making your cinnamon swirls (they don’t have to be perfect, have fun! We had designs and letters 🙂 )

Once you have it the way you want it. put it in the oven for about 8-10 min

Take out, slice and enjoy!









Next time I think I may just try using Bisquick with the cinnamon roll filling, if I ever needed it quick, I absolutely love the idea of putting it on the sheet and baking!
