Easiest Tasty Meatloaf

Man it has been a while since I shared anything fun with the blogging world…almost a year! Just a quick recap of the last year, I became CFO at work and I now have a 3 month old boy that joins the twins <3, so not much time for exciting baking, crafting or party planning.

Anyway, now on to the reason for the post, Meatloaf! Let me preface by saying that I don’t like Stove Top stuffing AT ALL!! My husband loves it but that is the one thing that does not go on my plate at Thanksgiving (no matter how hard he tries to make me eat it ๐Ÿ˜‰ )

Now a days I don’t have time to make a meal that takes longer than a half hour start to finish, but with a meal that simply takes 10 min to prepare I had to give it a shot. Not only that, but I love meatloaf (my kids actually do too!). I feel this is a very controversial food, some like it, andย some don’t. Usually the people that don’t like it is a result of their childhood, “I hated the way my mom made it and it just stuck and I can’t bring myself to eat it…”. Clearly I am not one of those people.

While looking for a quick meal on Pinterest (of course), I found this Stuffing Meatloaf, it was super quick (to prepare) andย we really enjoyed the result.

Stove Top Stuffing Meatloaf

  • 1 Pound Ground Meat (Beef or Turkey)
  • 1 Egg
  • 1 Box Stuffing Mix
  • 1 Cup Water

Mix everything together, smoosh it into a loaf pan, and bake at 350 for about 45 minutes to an hour.

THATS IT!! Can you believe it, no trying to figure out what spices to put in, how much breadcrumbs, etc, just dump the box contents in and mix everything together…can’t get any easier or better than that!

Give it a shot, we all know you are as busy as me. Do it and then sit back and enjoy a glass of wine while it bakes ๐Ÿ™‚

Monday- French Bread Pizza

Tuesday- Parmesan Crusted Baked Pork Chops (carryover from last week)

Wednesday- Burgers and Onion Strings

Thursday- One Pot Tortellini & Sausage in Tomato Cream Sauce

Friday- One Dish Chicken Tamale Casserole (provided by a dear friend Jess <3)

For anyone who reads to the bottom or who it interested…My almost 10 month son is getting his first haircut today and I still don’t know how I feel about it but I know it will benefit him so I am going along with it (for Aaron ๐Ÿ˜‰ ) Ahhhhh my kids are growing TOO FAST!

Menu Monday 8/11-8/15

What a wonderful weekend…can you all agree?!? Beautiful weather and great friends…PERFECT! โค

Now on to the weekly menu, which isn’t anything amazing but I will share anyway.


Monday- Pork Cubes and Potato Wedges

Tuesday- Homemade Pizza (testing out our Pampered Chef Pizza Stone for the first time!!!)

Wednesday- Zucchini Lasagna

Thursday- Out to dinner with good friends we haven’t seen in a while!

Friday- Pesto Chicken Sandwiches and salad (we might test out this creamy pesto)

Menu Monday 8/4-8/8

I know I haven’t been around much to post Menu Mondays…well actually I haven’t been planning much, things have gotten kinda crazy!

So here you go…Menu Monday in maybe a month ๐Ÿ˜‰


Monday- Leftovers (we decided to order 3 medium pizza’s last night so that will be lunch and dinner for a couple days lol)

Tuesday-Chicken Diablo

Wednesday- One Pot Pasta Mexican Skillet

Thursday- Saucelicious Slow Cooker Pork Chops

Friday- Crock pot Pesto Ranch Chicken

We will see what we actually eat though ๐Ÿ˜‰

Menu Monday 5/27 – 5/30

I hope everyone has today off like I do!!! HAPPY MEMORIAL DAY! Thank you to all the men and women who serve and have served! It takes very strong people to do what you do and I am very thankful!!!

Last week we made a delicious salad and really enjoyed that sweet corn and bacon Mac and cheese!!

We are trying to be a little healthier and have made a plan to try and have some sort of salad at least once a week, so let’s see how long we can keep it up ๐Ÿ™‚

This week’s menu is as follows:


MONDAY: picnic at a friends house! Burgers, dogs, salad and dessert

TUESDAY: Memorial Day leftovers

WEDNESDAY: Penne with asparagus and cherry tomatoes

THURSDAY: Green apple, candied walnut and cranberry salad

FRIDAY: Taco-Roni

So what is your best kind of picnic salads? For this holiday weekend I have made a couple different salads. Such as broccoli salad, carrot and apple salad and a corn and tomato salad.


Menu Monday 5/19-5/23

We had such an amazing weekend! The weather was beautiful, we felt accomplished and it was just an all around fun and wonderful weekend spent with the kids! We didn’t even do anything over the top or crazy, it was just nice to hangout and relax, enjoying each day โค

I hope your menu looks better than mine! I really need to start getting some fun healthy recipes!
