Strawberry Lemonade Cookies

I made these fantastic cookies for my Nieces 3rd Birthday Party about a month ago and they were a HUGE hit! Perfect for summer. Super Easy and Super Good!

Strawberry Lemonade Cookies

Ingredients

(15.25 ounce) Betty Crocker Super Moist lemon cake mix
1
(15.25 ounce) Betty Crocker Super Moist strawberry cake mix
4
eggs
2/3
cup vegetable oil (divided)
2
teaspoons lemon juice
2
cups powdered sugar (divided)
1
tablespoons milk

Directions

  • Preheat oven to 375 degrees F.
  • Begin by making the two cake mixes. Pour the lemon cake mix into a large bowl and the strawberry cake mix in another bowl. To each cake mix, add 2 eggs, 1/3 cup vegetable oil, and 1 teaspoon of lemon juice; mix until well blended. Cover and refrigerate each bowl for 20 minutes to firm slightly.
  • Remove batters from fridge, and take 1 rounded teaspoon of lemon batter and roll into a ball. Repeat with the strawberry batter. Gently roll the lemon and strawberry dough together to make one large ball.
  • Transfer the dough ball into a bowl with 1 cup of powdered sugar, and roll to lightly coat in sugar. Place on a parchment-covered baking sheet at least 2 inches apart. Repeat with remaining dough.
  • Bake each batch for 10 minutes, until they turn slightly golden and are cooked through. Transfer to wire rack and let cool completely before serving.

Oreo Chunk Chocolate Chip Cookies

This is one of the first recipes I found and made on Pinterest and I make them for different functions here and there and they are always such a HUGE hit!

I am a HUGE cookie monster which I am sure I have mentioned before, but these truly are so good!! Then again, anything with Oreo’s in it is going to get an A++ from me πŸ™‚

Oreo Chunk Chocolate Chip Cookies

Recipe makes between 4 and 5 dozen cookies.

Ingredients:

2 1/2 cups all purpose flour
1 teaspoon baking soda
1 teaspoon salt

1 package vanilla instant Jell-O Pudding (not prepared)

1 dash of cinnamon

1 cup (2 sticks) butter, softened

3/4 cup sugar

3/4 cup brown sugar

1 teaspoon vanilla extract

2 eggs

2 cups chocolate chips

30-40 double stuffed Oreos, crushed into medium chunks (put in a ziplock bag and use a rolling pin)

Directions:

Preheat oven to 375 degrees Fahrenheit

  • In a medium bowl combine the flour, baking soda, salt, package of vanilla pudding mix, and dash of cinnamon.
  • In a second larger bowl beat together the butter, sugar, brown sugar and vanilla extract until creamy.
  • Add the eggs one at a time, beating well after each addition.
  • Slowly beat in the flour mixture until smooth.
  • Stir in the chocolate chips and Oreo chunks.
  • Drop by rounded tablespoon onto ungreased cookie sheet.
  • Bake 9 to 11 minutes or until golden brown.
  • Cool on wire rack.

White Chocolate Oreo Cookies

Here is a one of the first cookies I created way back when and I hope you enjoy them!

White Chocolate Oreo Cookie

Ingredients:

1 1/2 sticks of butter (softened)

1 cup brown sugar

1/2 cup sugar

2 eggs

2 1/2 cups flour (sifted)

1/2 tsp baking soda

1 1/2 tsp vanilla extract

1/2 tsp salt

1 bag White Chocolate Chips

2 Cups chopped up oreo’s (I normally place them in a large zip loc and use a wooden spoon and whack them hahaha so that they are in small chunks and pieces)

Directions:

Preheat the oven to 375Β°

Mix butter & sugars

Add eggs & vanilla

Add sifted flour, salt & soda

Add White chips and cookie pieces and mix until well blended

Place teaspoon full drops of dough on a greased cookie sheet and bake for 10 mins.

Enjoy these heavenly creations!

Cherry Almond Tasties

Yay I finally made a new cookie!! I feel like I have been slacking! I have been very anxious for this cookie and I am so excited how it turned out, it kind of reminds me of a vanilla wafer πŸ™‚

I hope you enjoy them!

Cherry Almond Tasties

Ingredients:

Cookie:

1 1/2 sticks of butter (softened)

1 cup brown sugar

1/2 cup sugar

2 eggs

2 tsp almond extract

1 1/2 Tbsp cherry juice

2 1/2 cups flour

1/2 tsp baking soda

1/2 tsp salt

1 cup chopped cherries (as dry as possible; I just squeezed them with a paper towel)

Β  Glaze:

1 cup powdered sugar

1-3 Tbsp of cherry juice (add one Tbsp at a time and get it to your desired consistency)

1/2 tsp veg oil

sliced almonds (optional, only for the top of cookie for decoration)

Directions:

1. Mix butter & sugars

2. Add eggs, almond extract & cherry juice

3. Add flour, salt & soda

4. Add chopped cherries

5. Place the dough in the fridge for at least an hour (to help harden the dough a little)

When dough has hardened some and you can handle it:

Roll the dough into medium sized balls (the dough will still be sticky but I found if I had my hands damp it made it easier to handle) and placeΒ  on a greased cookie sheet and bake for 10 mins (they will get a bit brown on the bottom, but this is perfectly ok, they aren’t burnt and they give it that vanilla wafer texture!).

After all the cookies have been baked now it is time to make the glaze (you don’t want to make it too soon because it will harden and be hard to work with)

7. Using a whisk. whisk together the powdered sugar, cherry juice and veg oil until it is well blended

8. Take the cookies and dip the top of them into the glaze and using a knife spread it around evenly on the top of the cookie, then place two almond slices on top.

9. Go ahead and gobble them up! I did, it was very hard not to πŸ™‚

I really enjoyed these cookies not glazed, but they were good either way so, if you don’t feel like glazing them, you won’t be missing much, they are still delicious!!

Skittles Delight Cookie

Skittles…like, Taste the Rainbow Skittles? When I told some people that I wanted to make some Skittles Cookies, they all looked at me puzzled and were very curious to see how they would come out. Well let me just tell you, they taste amazing! My husband thinks they taste like Trix and another friend said they taste like fruity pebbles πŸ™‚ So yup they are yummy and fruity!

My inspiration for this cookie was a cross between an M&M and funfetti! I really enjoy Skittles and was thinking a nice fruity cookie might be pretty good and I wasn’t wrong. Obviously Skittles aren’t as cooperative in the oven as M&M’s (the Skittles melted and leaked everywhere) and the funfetti factor definitely came when I added finely chopped (powderish) Skittles pieces to the batter, giving you that spotty rainbow of color.

I had 3 tries with this cookie! This was one of the hardest cookies I had ever dealt with, man was it a temperamental cookie! The biggest issue I had was the baking, the flavor was there the entire time, but they weren’t baking all the way through, the combination of the powdered pudding and the melty skittles just wasn’t reacting the way I needed!

Here is a picture of take one! I used the full Skittle and not enough of them, I didn’t chop them up and I only used a 7 oz bag…They looked and tasted yummy (mostly, they didn’t cook all the way through).

Here is a picture of the batter from Take 2, the skittles mostly chopped up. I wanted smaller skittle pieces (the smaller the better, the powder you get from chopping is a good thing too!). The Batter is just so colorful and pretty!

Here is a nice picture from Take 2, I chopped up the Skittles, flattened the rolled dough balls a little and baked at a lower temp for longer and still the baking of the cookie wasn’t 100% 😦

Finally with Take 3 we got it! After Take 2 all I decided I was going to try was flattening the balls more and voila it was a baking miracle, they cooked all the way through πŸ™‚ This may seem like a simple solution the first couple times but, 1 I have never had to flatten my cookies and 2 it wasΒ  kind of difficult with the full Skittles in the beginning.

Anyway, so it took me 3 tries for this one and man was it driving me crazy…I was actually getting sick of tasting and testing a COOKIE!!!!!

Skittles Delight Cookie

Ingredients:

1 1/2 sticks of butter (softened)

1 cup brown sugar

1/2 cup sugar

2 eggs

1 box Vanilla Pudding (large box)

2 1/2 cups flour (sifted)

1/2 tsp baking soda

1/2 tsp salt

14oz bag of Skittles (chopped as small as you can get, even powder is good! The flavor will still be there and it will make the cookie pretty)

**The smaller the skittle piece the easier it will be to chew, the melting of the skittle in the oven and the hardening after cooling, makes them harder to chew.

Directions:

Preheat the oven to 350Β°

Cream butter & sugars

Add eggs

Add vanilla pudding

Add sifted flour, salt & soda

Add the chopped Skittles (Mix it up in the mixer)

Place 1 inch balls about 1 1/2 inches apart on the cookie sheet

Use the bottom of a glass and flatten them to about 1/2 -3/4 of an inch (THIS IS A HUGE STEP!)

Put them in the oven and bake for about 11min

*Remove from cookie sheet and place on cooking rack immediately, the longer you let sit the longer the skittles (if any juices leak out) have time to harden and stick to the pan, making it hard to move over and keep its shape.

My Standard Cookie Dough

I have played with many varieties of cookie dough until I found the best combination. This is a standard sugar cookie dough that you will see as the base of many of my cookies that you will see me create.

I have probably been in a cookie creating rut for a little over 6 months now and I was hoping that this blog would give me the boost that I needed and get me back into the swing of things!

In the next couple weeks and the many to follow, I hope to share some cookie creations with you! I have created one and have tons of other ideas and I can’t wait to test them out and share them with you.

I figured since you will see this as the base for many of my cookies, I would share this recipe with you first πŸ™‚

Sugar Cookie Dough

Ingredients:

1 1/2 sticks of butter (softened)

1 cup brown sugar

1/2 cup sugar

2 eggs

Peppermint Hot Chocolate Minties

Since I have had no time to upload any of my pictures to share some awesome stuff with you I figured I would dish out on of my cookies that I created πŸ™‚

This cookie is one that I created for the Kiss 95.7 Courtney’s Cookie Exchange Contest maybe a little over a year ago put on by Stonewall Kitchen. The only requirement was that you had to use one stonewall kitchen product in your cookie, so I used their Peppermint Hot Chocolate. I came in second place because a stupid Biscotti beat me…let me just say that it was not anything special, it was not creative at all and not that good (well I may be biased a little)! Whatever it was still great to see people I don’t know trying one of my cookies, it was a great feeling (Even though I wasn’t the one who baked them…they baked them at Stonewall Kitchen)!

Without further a do here is my cookie πŸ™‚ (sorry no pictures)

Peppermint Hot Chocolate Minties (makes about 8 dozen)

Ingredients:

1 Cup Shortening

1 Cup Stonewall Kitchen Peppermint Hot Chocolate (or any peppermint hot chocolate)

Β½ Cup Brown Sugar

2 Eggs

2 Cups Flour

1 Β½ Tsp. Salt

1 Tsp. Baking Soda

1 bag (10lbs) Hershey Peppermint Kisses (Divided)

  • Chop about 2 cups of kisses (about 60), not too much you don’t want powder, small chunks
  • Cut up the remaining into pieces to melt on the top of the cookies

Directions:

  1. Preheat oven to 350o
  2. Cream together Shortening, Hot Chocolate & Brown Sugar
  3. When well mixed, add in eggs
  4. Sift Flour, Baking Soda & Salt and add to creamed mixture
  5. Stir in the chopped Kisses
  6. Place 1 inch balls onto cookie sheet and bake about 10 min
  7. Remove cookies from the oven & leave them on the baking sheet

While still on baking sheet place a piece of the kiss on top and let melt (about a min.) and swirl the melted kiss on top, then move the cookies to the cooling rack
