Easy Pineapple Orange Layer Cake

This was an awesome find!!! I made this for Easter and it was sooo good and of course so easy! I recently had a coworker say to me, “you always say that!” and believe me I mean it! I don’t have time to make something that takes a lot of time or energy and before the kids I was just lazy hahaha!

Here is this yummy treat! It makes a large cake, and even after everyone had some for dessert at Easter, we had plenty extra to take to work for a couple days and to hand out to coworkers 🙂

Easy Pineapple Orange Layer Cake

Ingredients
For the cake:
  • 1 package (18.25 oz.) yellow cake mix
  • 1/2 cup vegetable oil
  • 1 can  mandarin oranges, undrained
  • 3 eggs
  • 1/2 cup sour cream
For the frosting
  • 1 can crushed pineapple, undrained
  • 1 package  instant vanilla pudding
  • 2 cups heavy cream
Instructions
  1. Preheat oven to 350 degrees. Grease and flour 2 (8 or 9 inch) round cake pans.
  2. In a large bowl, beat the cake mix, oil, oranges, eggs and sour cream until well blended.
  3. Bake for 18-20 minutes, or until a toothpick inserted in center comes out clean. Cool completely.
  4. Meanwhile, in a medium bowl combine the crushed pineapple and instant pudding mix.
  5. With an electric mixer, beat the cream until soft peaks form. Fold the pineapple mixture into the whipped cream to combine.
  6. Frost in between each layer, and the top and sides of the cake with the pineapple whipped cream mixture.
  7. Refrigerate cake until ready to serve.

This all worked out pretty well, the only thing I did differently is I only did a 2 layer instead of a 3 layer and it worked out perfectly! Next time I would either add more mandarin orange or I will add in some orange zest to the batter to get more of that orange flavor.

I think this is perfect timing for this cake as it will make an awesome Mothers Day dessert 😉

Striped Cookie S’mores

So last week we went on an amazing, relaxing vacation in Maine on Eagle Lake! it was nice to have a vacation where we literally did nothing, I read 4 books and enjoyed the water!

Anyway, what better way to enjoy a vacation then with books, water and S’MORES!!!!!!!!!

I absolutely love them, I don’t know how you like your marshmallows toasted but I like mine a toasty brown, if that thing catches on fire, and there is black…FORGET IT! IT IS RUINED HAHAHA, that is where I pass it on to my Husband or a friend to enjoy…I think that is GROSS!

Well one of my genius friends, who got this from another friend had a great less messy idea for s’mores, and I am always up to try something new! Well, this is what we did instead of the normal s’more with a chocolate bar and graham cracker square…

That’s right we used the striped cookies as our graham cracker and chocolate, it was SO PERFECT!!!

Toast those bad boys, then take two cookies, fudge side down and squish that marshmallow in between and enjoy the gooey hotness!!! These were so amazing, they were less messy and oh so much more tasty then boring old graham cracker squares!!

The summer is young and I know there will be plenty more fires and s’mores, so go ahead and give these a shot, you won’t be sorry!!!

Butterfinger Pie

Here is another dessert I made for Easter. I found it here from Pinterest a long time a go and I have made it a couple times and love it! I love everything about it, the fact that it has 4 ingredients, that it is so easy and quick and that it has butterfingers…YUM!

INGREDIENTS:
1 bag bite size butterfinger candy bars, crushed (I put it in a food processor and made it really fine)
1 (8 ounce) package cream cheese (softened)
1 (12 ounce) carton Cool Whip
1 graham cracker crust
DIRECTIONS:
Cream together the cream cheese and cool whip
Then add the crushed butterfinger (reserving a little to sprinkle on top) and mix until well blended
Put it in pie crust
Sprinkle the reserved crushed butterfinger on top

Then Chill until you are ready to enjoy!

How simple is that! Now go ahead and give it a shot! You have no excuse not to 😉

Easy and Simple Ambrosia Salad

Ever need a quick, good dessert? Well this is one for you! A lot of people think that an ambrosia is a big to-do but it can actually be very simple, and taste pretty amazing! Here is one of my husbands favorite desserts and one that would be a great last minute dessert for any party or get together!

Simple Ambrosia Salad

1 carton of Cool Whip

2 cans of Fruit Cocktail

1/2 bag of Marshmallows

Fold the Cool Whip into the Fruit Cocktail & Marshmallows in a medium bowl, and you are done! Scoop some into a bowl and enjoy!

**Sometimes we even add some chunked pineapple (canned) or some green grapes, it all depends on your mood and how easy and quick you want it 🙂
