Peppermint Hot Chocolate Minties

Since I have had no time to upload any of my pictures to share some awesome stuff with you I figured I would dish out on of my cookies that I created πŸ™‚

This cookie is one that I created for the Kiss 95.7 Courtney’s Cookie Exchange Contest maybe a little over a year ago put on by Stonewall Kitchen. The only requirement was that you had to use one stonewall kitchen product in your cookie, so I used their Peppermint Hot Chocolate. I came in second place because a stupid Biscotti beat me…let me just say that it was not anything special, it was not creative at all and not that good (well I may be biased a little)! Whatever it was still great to see people I don’t know trying one of my cookies, it was a great feeling (Even though I wasn’t the one who baked them…they baked them at Stonewall Kitchen)!

Without further a do here is my cookie πŸ™‚ (sorry no pictures)

Peppermint Hot Chocolate Minties (makes about 8 dozen)

Ingredients:

1 Cup Shortening

1 Cup Stonewall Kitchen Peppermint Hot Chocolate (or any peppermint hot chocolate)

Β½ Cup Brown Sugar

2 Eggs

2 Cups Flour

1 Β½ Tsp. Salt

1 Tsp. Baking Soda

1 bag (10lbs) Hershey Peppermint Kisses (Divided)

  • Chop about 2 cups of kisses (about 60), not too much you don’t want powder, small chunks
  • Cut up the remaining into pieces to melt on the top of the cookies

Directions:

  1. Preheat oven to 350o
  2. Cream together Shortening, Hot Chocolate & Brown Sugar
  3. When well mixed, add in eggs
  4. Sift Flour, Baking Soda & Salt and add to creamed mixture
  5. Stir in the chopped Kisses
  6. Place 1 inch balls onto cookie sheet and bake about 10 min
  7. Remove cookies from the oven & leave them on the baking sheet

While still on baking sheet place a piece of the kiss on top and let melt (about a min.) and swirl the melted kiss on top, then move the cookies to the cooling rack
