So sometimes I feel as though I post post post but I don’t really know who is actually looking or reading my blog.

Menu Monday 5/27 – 5/30

I hope everyone has today off like I do!!! HAPPY MEMORIAL DAY! Thank you to all the men and women who serve and have served! It takes very strong people to do what you do and I am very thankful!!!

Last week we made a delicious salad and really enjoyed that sweet corn and bacon Mac and cheese!!

We are trying to be a little healthier and have made a plan to try and have some sort of salad at least once a week, so let’s see how long we can keep it up 🙂

This week’s menu is as follows:

MONDAY: picnic at a friends house! Burgers, dogs, salad and dessert

TUESDAY: Memorial Day leftovers

WEDNESDAY: Penne with asparagus and cherry tomatoes

THURSDAY: Green apple, candied walnut and cranberry salad

FRIDAY: Taco-Roni

So what is your best kind of picnic salads? For this holiday weekend I have made a couple different salads. Such as broccoli salad, carrot and apple salad and a corn and tomato salad.

Are Bookmarks Dead?

I came across this on a blog I follow (go check John out, he is pretty cool!) and thought it was a perfect question! Are bookmarks dead?!?

Not to me! I love bookmarks! I don’t have any that are super snazzy or anything but I love being able to look at an “actual” book and see where I am, I love watching the bookmark move. Weird, maybe but I prefer an actual book over an e-reader. With my now busy life do I tend to read more on electronics sure but I prefer not to 🙂

So how about you followers? Do you still use bookmarks? Or do you have other ways to mark your spot?

Bookmarks. No, I’m not talking about that little tab at the top of your browser that saves your favorite websites for easy navigation. I’m talking those things that we used to put on the insides of our books to save our page.

I’ve never been a huge fan of bookmarks. But I always liked looking at all the cool designs at my elementary school book fairs. And at Barnes and Noble on that little twisty thing. You could always find one that caught your interest that you just had to buy. Give me a bookmark with Katniss on it! Matter of fact, give me all of the bookmarks with Katniss on them! Or Hermione. Cinnamon Cream Cheese Rolls

I made these forever ago, just on a whim because I wanted a cinnamon roll. So me being me took it a step further and came up with these! (I hope as I type below I remember what I did hahaha!)

Cinnamon Cream Cheese Rolls

Ingredients:

1 can crescent rolls

4oz cream cheese (somewhat softened)

1/2 cup sugar

cinnamon (or cinnamon and sugar)

Directions:

  • Preheat the oven to 375 degrees (or what the temp says on your crescent rolls)
  • Unroll the crescent rolls and press the seams together so there are no breaks in dough
  • In a small bowl, with a mixer cream the cream cheese and sugar together
  • Spread the cream cheese mixture on the unrolled crescent rolls and sprinkle (or dump, depending on how much cinnamon flavor you want) the cinnamon (or cinnamon and sugar) all over the cream cheese mixture
  • Once covered, very carefully roll the dough into a tight log
  • Slice the log into your preferred width ( I did about and inch or so)
  • Place them on a greased baking sheet and bake for about 11-13 min (or the amount of time stated on your crescent roll package)
  • Pull them out and enjoy!

**They are good cool for a couple days too, but I wouldn’t eat them too far after that

Menu Monday 5/19-5/23

We had such an amazing weekend! The weather was beautiful, we felt accomplished and it was just an all around fun and wonderful weekend spent with the kids! We didn’t even do anything over the top or crazy, it was just nice to hangout and relax, enjoying each day ❤

I hope your menu looks better than mine! I really need to start getting some fun healthy recipes!

Menu Monday 5/12-5/16

I hope everyone had an amazing Mothers day! I know mine was super special and amazing because it was my first! Plus I have double the joy so I got to love on two amazing kids ALL day!

Last week we tried a couple new things and all seemed to turn out ok! We tried Chicken Suiza Taco’s (which is just shredded chicken, onion, green pepper, canned corn, black beans and green chilies, heated on the stove and thrown in a wrap. Let me know if you want the recipe 😉 ) and the One Pot Smoked Sausage and Pasta Skillet wasn’t too bad either! They were both super easy which is why they may stick around.

Who knew the random things we fall in love with! I don’t think these are too random but some may. I am addicted to the following these past couple weeks 🙂

Dunkin Oreo Vanilla Bean Coolatta: Um hello, Oreo in a drink…YES! YES! YES! It tastes just like an Oreo! I do want to try the coffee one but haven’t gotten around to it yet (but I am sure I won’t have any problems liking it!)

OPI Grape fit nail polish: Isn’t this a beautiful color? I got this on my toes last week when I had gotten a pedicure and I LOVE IT! I have been wearing sandals just so I can show it off even though my coworker thinks I am nuts because even though it is May we haven’t had too much warm flip flop weather.

Snack Pack Lemon Pudding: OMG! I don’t’ know how I didn’t know about this pudding but it is AMAZING! It is like Lemon Meringue pie in a cup! Jess if you haven’t tried it yet you need to NOW! And Wendy I can’t believe you have been having this all along and I DID NOT know about it! 🙂

Easy Pineapple Orange Layer Cake

This was an awesome find!!! I made this for Easter and it was sooo good and of course so easy! I recently had a coworker say to me, “you always say that!” and believe me I mean it! I don’t have time to make something that takes a lot of time or energy and before the kids I was just lazy hahaha!

Here is this yummy treat! It makes a large cake, and even after everyone had some for dessert at Easter, we had plenty extra to take to work for a couple days and to hand out to coworkers 🙂

Easy Pineapple Orange Layer Cake

Ingredients
For the cake:
  • 1 package (18.25 oz.) yellow cake mix
  • 1/2 cup vegetable oil
  • 1 can  mandarin oranges, undrained
  • 3 eggs
  • 1/2 cup sour cream
For the frosting
  • 1 can crushed pineapple, undrained
  • 1 package  instant vanilla pudding
  • 2 cups heavy cream
Instructions
  1. Preheat oven to 350 degrees. Grease and flour 2 (8 or 9 inch) round cake pans.
  2. In a large bowl, beat the cake mix, oil, oranges, eggs and sour cream until well blended.
  3. Bake for 18-20 minutes, or until a toothpick inserted in center comes out clean. Cool completely.
  4. Meanwhile, in a medium bowl combine the crushed pineapple and instant pudding mix.
  5. With an electric mixer, beat the cream until soft peaks form. Fold the pineapple mixture into the whipped cream to combine.
  6. Frost in between each layer, and the top and sides of the cake with the pineapple whipped cream mixture.
  7. Refrigerate cake until ready to serve.

This all worked out pretty well, the only thing I did differently is I only did a 2 layer instead of a 3 layer and it worked out perfectly! Next time I would either add more mandarin orange or I will add in some orange zest to the batter to get more of that orange flavor.

I think this is perfect timing for this cake as it will make an awesome Mothers Day dessert 😉

 

Menu Monday 5/5-5/9

Should I do a menu for the little ones too?!? BECAUSE… they started solids this weekend! Can you believe it!!! They are already 6 months 🙂

Well we started with peas and both seem to like it! (little A not so much at first, the first time she gagged and projectile vomited all over EVERYTHING!, but J is a champ and he ate it all up!) I can’t believe how fast my little ones are growing up!

Now on to the adult food 😉

Last week we tried a ham casserole and a stuffed pepper casserole which were both pretty amazing, so go ahead and test them out if you haven’t already.
