Skittles Delight Cookie

Skittles…like, Taste the Rainbow Skittles? When I told some people that I wanted to make some Skittles Cookies, they all looked at me puzzled and were very curious to see how they would come out. Well let me just tell you, they taste amazing! My husband thinks they taste like Trix and another friend said they taste like fruity pebbles 🙂 So yup they are yummy and fruity!

My inspiration for this cookie was a cross between an M&M and funfetti! I really enjoy Skittles and was thinking a nice fruity cookie might be pretty good and I wasn’t wrong. Obviously Skittles aren’t as cooperative in the oven as M&M’s (the Skittles melted and leaked everywhere) and the funfetti factor definitely came when I added finely chopped (powderish) Skittles pieces to the batter, giving you that spotty rainbow of color.

I had 3 tries with this cookie! This was one of the hardest cookies I had ever dealt with, man was it a temperamental cookie! The biggest issue I had was the baking, the flavor was there the entire time, but they weren’t baking all the way through, the combination of the powdered pudding and the melty skittles just wasn’t reacting the way I needed!

Here is a picture of take one! I used the full Skittle and not enough of them, I didn’t chop them up and I only used a 7 oz bag…They looked and tasted yummy (mostly, they didn’t cook all the way through).

Here is a picture of the batter from Take 2, the skittles mostly chopped up. I wanted smaller skittle pieces (the smaller the better, the powder you get from chopping is a good thing too!). The Batter is just so colorful and pretty!

Here is a nice picture from Take 2, I chopped up the Skittles, flattened the rolled dough balls a little and baked at a lower temp for longer and still the baking of the cookie wasn’t 100% 😦

Finally with Take 3 we got it! After Take 2 all I decided I was going to try was flattening the balls more and voila it was a baking miracle, they cooked all the way through 🙂 This may seem like a simple solution the first couple times but, 1 I have never had to flatten my cookies and 2 it was  kind of difficult with the full Skittles in the beginning.

Anyway, so it took me 3 tries for this one and man was it driving me crazy…I was actually getting sick of tasting and testing a COOKIE!!!!!

Skittles Delight Cookie

Ingredients:

1 1/2 sticks of butter (softened)

1 cup brown sugar

1/2 cup sugar

2 eggs

1 box Vanilla Pudding (large box)

2 1/2 cups flour (sifted)

1/2 tsp baking soda

1/2 tsp salt

14oz bag of Skittles (chopped as small as you can get, even powder is good! The flavor will still be there and it will make the cookie pretty)

**The smaller the skittle piece the easier it will be to chew, the melting of the skittle in the oven and the hardening after cooling, makes them harder to chew.

Directions:

Preheat the oven to 350°

Cream butter & sugars

Add eggs

Add vanilla pudding

Add sifted flour, salt & soda

Add the chopped Skittles (Mix it up in the mixer)

Place 1 inch balls about 1 1/2 inches apart on the cookie sheet

Use the bottom of a glass and flatten them to about 1/2 -3/4 of an inch (THIS IS A HUGE STEP!)

Put them in the oven and bake for about 11min

*Remove from cookie sheet and place on cooking rack immediately, the longer you let sit the longer the skittles (if any juices leak out) have time to harden and stick to the pan, making it hard to move over and keep its shape.
